Project background
Food borne diseases caused by foodborne pathogens are the core issues of food safety. Food borne pathogenic microorganisms can be transmitted through contact surface, water, soil, air, excreta, food and other media, thus polluting any link of the food chain "from farmland to dining table". Because of its variety, wide range of sources, great harm, and with the characteristics of mass outbreak, outbreak, wide host range, fast transmission speed, strong social impact and difficult control, it is an important factor causing food safety hazards, which will endanger human health and even social security, and cause huge economic losses. The history of food safety prevention and control has proved that with the development of society and the continuous improvement of laws and regulations, the food safety problems caused by food borne pathogenic microorganisms become more prominent after the illegal addition of food additives is solved or basically solved.
Due to the characteristics of various types, wide distribution, strong metabolic capacity, rapid growth and reproduction, easy cultivation, easy variation and strong adaptability, microorganisms exist in all aspects of food processing and catering industry. If the microbial indicators can not reach the relevant standards, it will harm human health. Microbial detection has become one of the important items in food safety detection.
